Creamy Cucumber Salad
A light, refreshing salad made with crisp cucumbers and a creamy, tangy dressing — perfect for summer meals or as a cool side dish.
Ingredients
- 2 large cucumbers, thinly sliced
- 1/2 small red onion, thinly sliced (optional)
- 1/2 cup sour cream (or Greek yogurt)
- 1 tablespoon white vinegar or lemon juice
- 1 teaspoon sugar (adjust to taste)
- 1 tablespoon fresh dill, chopped
- Salt and black pepper to taste
Instructions
- Prepare the cucumbers: Wash and thinly slice the cucumbers (you can peel them if preferred). If you want them less watery, sprinkle with a little salt and let them sit for 10–15 minutes, then pat dry.
- Make the dressing: In a mixing bowl, combine sour cream, vinegar, sugar, dill, salt, and pepper. Stir until smooth.
- Mix together: Add the cucumbers (and onions if using) to the dressing. Toss gently to coat evenly.
- Chill & serve: Refrigerate for at least 20 minutes before serving. The flavors blend beautifully as it chills.
