Ingredients:

  • 2 thick-cut ribeye or strip steaks (about 1 ½ inch thick)
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper (to taste)
  • 4 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 tsp fresh thyme or rosemary (optional)
  • ½ cup shredded mozzarella or provolone cheese
  • Fresh parsley (chopped, for garnish)

Instructions:

  1. Pat the steaks dry with paper towels. Season generously with salt and pepper on both sides.
  2. Heat olive oil in a heavy skillet (cast iron works best) over high heat until very hot.
  3. Sear the steaks for 3–4 minutes on each side until golden brown and cooked to your preferred doneness.
  4. Reduce heat to medium, add butter, garlic, and thyme/rosemary. Spoon the melted garlic butter over the steaks for extra flavor.
  5. Top the steaks with shredded cheese. Cover the skillet with a lid until the cheese melts.
  6. Transfer steaks to a plate, drizzle with extra garlic butter, and garnish with fresh parsley.
