- 2 tbsp mustard seeds
- 1 tbsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp paprika or chili powder (optional, for heat)

- Prep carrots: Shred carrots finely and place in a large mixing bowl.
- Sauté spices: Heat a little oil in a pan. Add mustard seeds, cumin seeds, turmeric, and paprika. Cook until fragrant.

- Simmer: Cook mixture on low heat for 10–15 minutes until softened and flavors meld.
- Jar: Spoon hot relish into sterilized jars. Seal tightly.
