  • ½ cup (120 ml) vegetable oil
  • ¼ cup (60 ml) melted butter
  • ½ cup (120 ml) milk or yogurt
  • 1 tsp vanilla extract

Add-ins

  • 1½ cups (180 g) finely grated carrots
  • 1 cup (120 g) grated zucchini (squeezed to remove excess water)
  • ½ cup chopped walnuts or pecans (optional)

Instructions 👩‍🍳

  1. Preheat: Set oven to 170°C / 340°F. Grease and line loaf pan or 8-inch cake pan.
  2. Dry mix: In a large bowl, combine flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Wet mix: In another bowl, whisk eggs, oil, butter, milk/yogurt, and vanilla until smooth.
  4. Combine: Add wet mixture to dry ingredients. Mix gently until just combined.
  5. Fold: Stir in carrots, zucchini, and nuts.
  6. Bake: Pour batter into prepared pan. Bake 45–55 minutes (loaf) or 35–40 minutes (round pan) until toothpick comes out clean.
  7. Cool: Let cake cool completely before frosting or slicing.
