Ingredients

The Bread

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • 1 tbsp lemon zest (about 1 large lemon)
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 1½–2 cups fresh blueberries (tossed in 1 tbsp flour)

The Glaze

  • ½ cup powdered sugar
  • 2–3 tbsp fresh lemon juice
  • Optional: extra lemon zest for garnish

  1. Preheat oven: 350°F (175°C). Grease and flour a loaf pan.
  2. Mix dry: In a bowl, whisk flour, baking powder, and salt.
  3. Cream butter & sugar: Beat softened butter with sugar until light and fluffy. Add eggs one at a time, then mix in lemon zest and vanilla.
  4. Combine: Add dry ingredients alternately with milk, mixing until smooth. Fold in blueberries gently.
  5. Bake: Pour batter into loaf pan. Bake 50–55 minutes, until golden and a toothpick comes out clean.
  6. Cool: Let bread cool 10 minutes in pan, then transfer to wire rack.
  7. Glaze: Whisk powdered sugar with lemon juice until smooth. Drizzle over cooled bread and garnish with zest.
