  • 1 cup (100 g) cheddar cheese, shredded
  • 1 cup (125 g) all-purpose flour
  • 2 eggs
  • ½ cup (120 ml) milk
  • 2 tbsp butter, melted
  • 1 tsp baking powder
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions 👩‍🍳

  1. Preheat oven: 180°C (350°F). Grease or line a muffin tin.
  2. Mix base: In a large bowl, combine mashed potatoes, flour, baking powder, salt, and pepper.
  3. Add wet: Stir in eggs, milk, and melted butter until smooth.
  4. Fold in: Add crumbled bacon and shredded cheddar. Mix gently.
  5. Fill tins: Spoon mixture into muffin cups, filling about ¾ full.
  6. Bake: Bake 20–25 minutes until golden and firm. A toothpick should come out clean.
  7. Serve: Garnish with parsley and enjoy warm.
