Ingredients
- 80 g butter, softened
- 100 g (½ cup) sugar
- 2 medium eggs
- 40 g (4 tbsp) lemon juice
- 170 g (1⅓ cups) flour, sifted
- 1 tsp baking powder
- A pinch of salt
- Leftover cheese (about 100–150 g, grated or crumbled)
- Optional: Zest of 1 lemon, a pinch of ginger or cardamom

- Preheat oven: 180°C (350°F). Grease and line a loaf pan or round cake tin.
- Cream butter & sugar: Beat softened butter with sugar until light and fluffy.
- Add eggs: Mix in eggs one at a time, then add lemon juice.
- Combine dry: Sift flour, baking powder, and salt. Gradually fold into wet mixture.
- Add cheese: Stir in grated or crumbled leftover cheese. Add zest or spices if desired.
