Ingredients
- 1 liter (4 cups) milk
- 1 cinnamon stick
- The peel of one lemon
- 5 egg yolks

- Cookies (as many as custard molds)
- Ground cinnamon (to taste)

- Infuse milk: Heat milk with cinnamon stick and lemon peel. Simmer gently for 5 minutes. Remove from heat and let flavors infuse. Strain.
- Mix yolks: In a bowl, whisk egg yolks with sugar until pale and creamy. Add cornstarch and mix well.
- Combine: Gradually pour warm infused milk into egg mixture, whisking constantly to avoid curdling.
- Cook custard: Return mixture to saucepan. Cook over medium heat, stirring continuously until thick and smooth.
- Prepare molds: Place a cookie at the bottom of each custard mold.
- Pour: Fill molds with custard. Let cool to room temperature, then refrigerate for at least 2 hours.
- Serve: Sprinkle ground cinnamon on top before serving.
