Ingredients

  • 2 pounds (900 g) beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 3 large potatoes, peeled and cubed
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • ¼ cup (30 g) all-purpose flour
  • 4 cups (1 liter) beef broth
  • 1 cup (240 ml) red wine (optional)
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions 👩‍🍳

  1. Brown beef: Heat olive oil in a large pot. Toss beef cubes in flour, then sear until browned on all sides. Remove and set aside.
  2. Sauté aromatics: In the same pot, cook onion and garlic until fragrant. Stir in tomato paste.
  3. Add vegetables: Add carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Simmer: Return beef to pot. Add beef broth, red wine (if using), thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce heat.
  5. Cook: Cover and simmer gently for 1½–2 hours until beef is tender and vegetables are cooked through.
  6. Finish: Remove bay leaf. Adjust seasoning. Garnish with fresh parsley before serving.
