Ingredients

  • 3 carrots (300 g / 10 oz)

  • 2 eggs
  • 4 tbsp starch
  • 4 tbsp flour
  • A bunch of cilantro and parsley, chopped
  • Salt & pepper, to taste
  • Oil for frying

  2. Mix: In a large bowl, combine grated potatoes, carrots, spring onions, herbs, eggs, starch, and flour. Season with salt and pepper.

  4. Cook: Heat oil in a skillet over medium heat. Fry fritters 3–4 minutes per side until golden and crispy.
