Diet Oat Apple Raisin Cake 🍎🌾✨
A simple, moist loaf packed with oats, apples, and raisins—naturally sweet, cozy with cinnamon, and perfect for breakfast or snack.
Ingredients
- Raisins: 50 g (1/3 cup)
- Hot water: Enough to soak the raisins
- Apples: 2 large, peeled and chopped
- Oat flakes (gluten-free): 150 g (1½ cups)
- Eggs: 2 large
- Cinnamon: 1 tsp
- Baking powder: 6 g (1½ tsp)
- Walnuts: 30 g (1/4 cup), chopped
- Pan size: 20 × 8 cm (8 × 3 inches)

- Prep pan: Line the 20 × 8 cm loaf pan with parchment. Preheat oven to 175°C (350°F).
- Soak raisins: Cover raisins with hot water for 10 minutes. Drain and pat dry.
- Blend oats: Pulse oat flakes in a blender to a coarse flour (optional for finer texture).
- Mix wet: In a bowl, whisk eggs. Fold in chopped apples and soaked raisins.
- Combine dry: In another bowl, mix oats, baking powder, cinnamon, salt (pinch). Add walnuts.
- Bring together: Stir dry into wet until just combined. If thick, add 1–2 tbsp milk or water.
- Bake: Spread batter in pan. Bake 35–45 minutes until golden and a skewer comes out clean.
- Cool: Rest 10 minutes in pan
