Ingredients

For the dough

  • Flour: 250 g (2 cups) all-purpose
  • Yeast: 1 tsp instant dry yeast
  • Sugar: 1 tbsp
  • Milk: 125 ml (1/2 cup) warm
  • Egg: 1 large, whisked (reserve 1 tbsp for glaze)
  • Butter: 3 tbsp (42 g) unsalted butter or margarine
  • Salt: 1 tsp

For the filling

  • Chicken: 1 cup cooked and shredded
  • Cheese: 1/2–1 cup shredded (mozzarella or cheddar)
  • Aromatics: 1 clove garlic minced, 1 tbsp finely chopped onion (optional)
  • Herbs & spice: 2 tbsp chopped parsley, 1/2 tsp paprika, 1/4 tsp black pepper, salt to taste
  • Creamy touch (optional): 1–2 tbsp cream cheese or mayonnaise

For glazing & topping

  • Egg wash: 1 tbsp reserved egg + 1 tbsp milk
  • Toppings (optional): sesame seeds, nigella seeds, or grated Parmesan

Instructions 👩‍🍳

  1. Make the dough: In a bowl, whisk flour, yeast, sugar, and salt. Add warm milk, whisked egg (minus 1 tbsp), and softened butter. Mix, then knead until smooth and elastic, 8–10 minutes.
  2. First rise: Cover and let the dough rise in a warm spot until doubled, 60–90 minutes.
  3. Prepare filling: In a bowl, combine chicken, cheese, garlic, parsley, spices, salt, and cream cheese/mayo if using.
  4. Divide: Punch down dough. Divide into 10–12 equal pieces and rest 10 minutes covered.
  5. Shape: Flatten each piece into an oval, add 1–2 tbsp filling, roll up tightly, and pinch seams. Place seam-side down on a parchment-lined tray.
  6. Proof: Cover and let rise 25–30 minutes until puffy.
  7. Bake: Brush with egg wash, sprinkle seeds if desired. Bake at 375°F (190°C) for 18–22 minutes until golden.
  8. Serve: Cool slightly and enjoy warm with your favorite dip.
