A lighter take on the classic spanakopita—no crust, just creamy spinach, eggs, and cheese baked golden.

Ingredients

  • 2 cups fresh or frozen spinach (thawed and drained)
  • 1 cup feta cheese, crumbled
  • ½ cup ricotta cheese (optional)
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 4 large eggs
  • Salt & black pepper, to taste
  • Optional: fresh dill or parsley for extra flavor

Directions

  1. Preheat oven: Set oven to 375°F (190°C). Grease a baking dish.
  2. Mix filling: In a large bowl, whisk eggs. Stir in spinach, feta, ricotta (if using), Parmesan, mozzarella, salt, pepper, and herbs.
  3. Assemble: Pour mixture into prepared dish. Smooth the top.
  4. Bake: Bake 30–35 minutes until golden and set in the center.
  5. Serve: Let cool slightly before slicing. Enjoy warm or at room temperature.
