Ingredients

  • 1 lb dried pinto beans, rinsed and soaked overnight, then drained
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1–2 fresh chilies or 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • Salt & pepper, to taste
  • Fresh cilantro, for garnish

Directions

  1. Sauté aromatics: Heat oil in a large pot. Add onion and garlic, cook until fragrant.
  2. Add spices: Stir in chili, cumin, and paprika. Cook 1 minute to release flavors.
  3. Combine: Add soaked beans, diced tomatoes, and broth. Stir well.
  4. Simmer: Bring to a boil, then reduce heat. Cover and simmer 1–1.5 hours until beans are tender.
  5. Season: Add salt and pepper to taste.
  6. Serve: Garnish with fresh cilantro. Enjoy with rice, tortillas, or crusty bread.
