Ingredients
- 1 lb dried pinto beans, rinsed and soaked overnight, then drained
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1–2 fresh chilies or 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- Salt & pepper, to taste
- Fresh cilantro, for garnish
Directions
- Sauté aromatics: Heat oil in a large pot. Add onion and garlic, cook until fragrant.
- Add spices: Stir in chili, cumin, and paprika. Cook 1 minute to release flavors.
- Combine: Add soaked beans, diced tomatoes, and broth. Stir well.
- Simmer: Bring to a boil, then reduce heat. Cover and simmer 1–1.5 hours until beans are tender.
- Season: Add salt and pepper to taste.
- Serve: Garnish with fresh cilantro. Enjoy with rice, tortillas, or crusty bread.
