  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1½ cups shredded cheddar cheese, divided
  • ½ cup milk
  • 1 cup frozen peas and carrots mix
  • Fresh parsley, for garnish

Directions

  1. Preheat oven: Set oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Sauté aromatics: Heat olive oil in skillet. Add onion and garlic, cook until soft.
  3. Cook beef: Add ground beef, paprika, salt, and pepper. Cook until browned. Drain excess grease.
  4. Mix casserole: Stir in cooked rice, cream of mushroom soup, sour cream, milk, peas and carrots, and 1 cup cheddar cheese. Mix well.
  5. Layer: Spread mixture into baking dish. Top with remaining ½ cup cheddar cheese.
