Instructions

  1. Prep the Roast: Remove prime rib from fridge 1 hour before cooking. Preheat oven to 500°F (260°C).
  2. Season Generously: Place roast on rack in roasting pan. Rub with olive oil, season with salt and pepper. Optionally, insert garlic cloves into small slits.
  3. Initial High-Heat Roast: Roast at 500°F for 15 minutes to form crust.
  4. Lower Heat & Finish: Reduce oven to 325°F (160°C). Roast until desired doneness:
    • Medium-rare: 135°F (57°C)
    • Medium: 140°F (60°C)
    • Well-done: 150°F (66°C)
    Use a meat thermometer for accuracy.
  5. Rest the Roast: Remove from oven, tent with foil, and rest 15–20 minutes.
  6. Serve: Slice and serve warm with sides like roasted veggies, mashed potatoes, or horseradish sauce.
