Ingredients
- 1 bone-in prime rib roast (6–8 pounds)

Instructions
- Prep the Roast: Remove prime rib from fridge 1 hour before cooking. Preheat oven to 500°F (260°C).
- Season Generously: Place roast on rack in roasting pan. Rub with olive oil, season with salt and pepper. Optionally, insert garlic cloves into small slits.
- Initial High-Heat Roast: Roast at 500°F for 15 minutes to form crust.
- Lower Heat & Finish: Reduce oven to 325°F (160°C). Roast until desired doneness:
- Medium-rare: 135°F (57°C)
- Medium: 140°F (60°C)
- Well-done: 150°F (66°C)
- Rest the Roast: Remove from oven, tent with foil, and rest 15–20 minutes.
- Serve: Slice and serve warm with sides like roasted veggies, mashed potatoes, or horseradish sauce.
