Ingredients
Fudgy Brownie Layer
- 1 (13-oz) box brownie mix
Creamy Cheesecake Layer
- 24 oz (3 pkgs) full-fat cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- ÂĽ cup heavy cream
- 1 tsp pure vanilla extract
Decadent Topping
- 1 cup thick caramel sauce
- ½ cup mini semi-sweet chocolate chips
- ÂĽ cup crumbled brownie pieces or dark chocolate chunks
- Optional: flaky sea salt
Instructions
- Prep & Prebake Brownie Base: Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line bottom with parchment. Prepare brownie batter per package instructions, spread evenly, and bake 18–20 minutes until slightly underdone. Cool 15 minutes (leave oven on).
- Make Cheesecake Filling: Beat cream cheese and sugar until smooth (2 min). Add eggs one at a time, mixing gently. Fold in cream and vanilla until uniform.
- Assemble & Bake: Pour cheesecake batter over brownie layer. Smooth top. Bake 50–55 minutes until edges are set and center jiggles slightly. Turn off oven, crack door, and rest cheesecake inside for 60 minutes.
- Chill Thoroughly: Cool on rack 1 hour. Cover loosely and refrigerate at least 6 hours or overnight.
- Finish & Serve: Run knife around edge before releasing springform. Drizzle caramel over top, sprinkle chocolate chips and brownie bits, and add flaky sea salt if desired. Chill 15–20 minutes before slicing with a warm, dry knife.
