Ingredients

  • 3 cups cold mashed potatoes
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped chives
  • ¼ cup all-purpose flour
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese (for coating)
  • Ghee or cooking spray (for greasing)

Instructions

  1. Preheat oven: Set oven to 400°F (200°C) and lightly grease a mini muffin tin with ghee or cooking spray.
  2. Prepare mixture: In a large bowl, combine mashed potatoes, egg, cheddar, chives, flour, garlic powder, salt, and pepper until well mixed.
  3. Fill tins: Scoop mixture into mini muffin cups, filling each about ¾ full.
  4. Top: Sprinkle Parmesan cheese over each portion for a golden crust.
  5. Bake: Bake for 15–20 minutes until tops are golden and edges crisp.
  6. Cool & serve: Let cool slightly before removing from tin. Serve warm.
