Ingredients
- 3 cups cold mashed potatoes
- 1 large egg
- 1 cup shredded cheddar cheese
- ¼ cup chopped chives
- ¼ cup all-purpose flour
- ½ teaspoon garlic powder
- Salt and pepper to taste
- ¼ cup grated Parmesan cheese (for coating)
- Ghee or cooking spray (for greasing)
Instructions
- Preheat oven: Set oven to 400°F (200°C) and lightly grease a mini muffin tin with ghee or cooking spray.
- Prepare mixture: In a large bowl, combine mashed potatoes, egg, cheddar, chives, flour, garlic powder, salt, and pepper until well mixed.
- Fill tins: Scoop mixture into mini muffin cups, filling each about ¾ full.
