Ingredients (for 9 pint jars)
- 6 medium potatoes, peeled and diced
- 1 lb partially cooked sausage (crumbled or sliced)
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 medium onion, diced
- 27 large eggs (about 3 eggs per jar)
- Salt & pepper to taste
- Optional: shredded cheese, fresh herbs
Instructions
- Prep potatoes: Boil or roast diced potatoes until just tender. Season lightly with salt and pepper.
- Sauté veggies: In a skillet, cook onion and peppers until softened and fragrant.
- Cook sausage: Finish cooking sausage until browned. Drain excess fat.
- Scramble eggs: In a large bowl, whisk eggs with salt and pepper. Cook gently until just set (slightly soft).
- Assemble jars: Divide potatoes, sausage, peppers, onions, and scrambled eggs evenly among 9 pint jars. Layer neatly.
