  • 6 medium potatoes, peeled and diced

  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 27 large eggs (about 3 eggs per jar)
  • Salt & pepper to taste
  • Optional: shredded cheese, fresh herbs

Instructions

  1. Prep potatoes: Boil or roast diced potatoes until just tender. Season lightly with salt and pepper.
  2. Sauté veggies: In a skillet, cook onion and peppers until softened and fragrant.
