Ingredients

  • 100 g almonds
  • 75 g walnuts
  • 125 g sugar
  • 125 g honey
  • 1 egg white
  • Oil for greasing
  • Icing sugar (for dusting)

Instructions

  1. Prepare Mold: Lightly coat a 22Ă—9 cm mold with oil. Sprinkle icing sugar evenly over the base and sides.
  2. Make Syrup: In a pot, mix honey and sugar. Bring to a boil over medium heat, stirring until sugar dissolves.
  3. Soft Ball Stage: Continue boiling until syrup reaches the soft ball stage (forms a soft ball in cold water).
  4. Whisk Egg White: In a bowl, whisk egg white until frothy. Slowly pour hot syrup into egg white while whisking constantly.
  5. Cook Filling: Return mixture to low heat, stirring until it thickens enough to coat a spoon.
  6. Add Nuts: Remove from heat and stir in toasted walnuts and almonds until evenly mixed.
  7. Set Dessert: Pour mixture into prepared mold. Smooth top with a spatula. Chill in fridge at least 12 hours until set.
  8. Serve: Remove from mold, slice into pieces, and dust with icing sugar if desired.
  9. Pairing: Best enjoyed with hot coffee or tea, and makes a lovely holiday gift.
