Instructions
- Preheat: Heat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.
- Make dough: Mix almond flour, erythritol, baking powder, salt, melted butter, egg, and vanilla until a soft dough forms.
- Base: Press half the dough evenly into the pan.
- Filling: Beat cream cheese and erythritol until smooth. Add egg and vanilla; mix until creamy. Spread over the base.
- Top layer: Flatten the remaining dough with your hands and lay over the filling.
- Topping: Brush with melted butter. Mix cinnamon and erythritol; sprinkle evenly on top.
- Bake: 30–35 minutes, until golden and the cheesecake layer is set.
- Chill: Cool, then refrigerate at least 2 hours before slicing.
