Ingredients (Serves 8)

For the Cake

  • 6 large eggs, separated
  • ¼ teaspoon cream of tartar
  • ⅓ cup powdered erythritol (or your favorite keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional Toppings

  • Sugar-free whipped cream
  • Fresh berries (strawberries, raspberries, blueberries)
  • Dusting of powdered erythritol

Instructions

  1. Preheat Oven: Set oven to 300°F (150°C). Line an 8-inch round cake pan with parchment paper.
  2. Whip Egg Whites: In a clean bowl, beat egg whites with cream of tartar and salt until stiff peaks form.
  3. Mix Yolks: In another bowl, whisk egg yolks with erythritol and vanilla until pale and creamy.
  4. Fold Together: Gently fold whipped egg whites into yolk mixture in batches, keeping the batter airy.
