A quick, yeast-free cheesy bread topped with melted mozzarella and parmesan. Perfect snack or side!

Ingredients

For the Dough

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 3 cups mozzarella cheese (low moisture, shredded)
  • 2 ounces cream cheese (softened)
  • 2 large eggs

For the Topping

  • 1 cup mozzarella cheese (shredded)
  • ½ cup parmesan cheese (freshly grated)
  • ¼ cup cilantro (for garnish)

Instructions

  1. Preheat & Prepare Pan: Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish or line with parchment paper.
  2. Make Dough: In a bowl, combine almond flour and baking powder. In another bowl, melt mozzarella and cream cheese together (microwave in 20–30 second intervals, stirring until smooth). Add eggs and mix well. Gradually stir in dry ingredients until dough forms (sticky texture).
  3. Assemble: Spread dough evenly in prepared dish. Sprinkle with mozzarella and parmesan.
  4. Bake: Bake 15–20 minutes until golden brown and cheese is bubbly.
  5. Garnish & Serve: Cool slightly, cut into squares or slices, and garnish with cilantro.
