Ingredients
For the Salad
- 2 boneless, skinless chicken breasts
- 1 head romaine lettuce, chopped
- ¼ cup Parmesan cheese, shaved
- 1 cup croutons (store-bought or homemade)
For the Marinade
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and pepper, to taste
For the Dressing
- ¼ cup mayonnaise
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions
- Marinate the Chicken: Mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Coat chicken breasts and marinate for at least 30 minutes (up to overnight).
- Grill the Chicken: Preheat grill or grill pan to medium-high. Grill chicken 6–7 minutes per side until cooked through. Rest, then slice.
- Prepare the Dressing: Whisk mayonnaise, olive oil, Dijon mustard, Worcestershire sauce, lemon juice, garlic, salt, and pepper until smooth.
- Assemble the Salad: Toss romaine lettuce, croutons, and Parmesan with dressing in a large bowl.
- Add the Chicken: Top salad with sliced grilled chicken. Garnish with extra Parmesan or croutons if desired.
