Ingredients
Red Velvet Brownie Layer
- ½ cup (115 g) unsalted butter, melted
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp (30 ml) red food coloring
- ⅓ cup (40 g) cocoa powder
- ½ tsp salt
- ¾ cup (95 g) all-purpose flour
Cookies & Cream Layer
- 8 oz (225 g) cream cheese, softened
- ¼ cup (50 g) granulated sugar
- 1 large egg
- ½ tsp vanilla extract
- 10–12 chocolate sandwich cookies (e.g., Oreos), roughly chopped
Topping
- 4–5 chocolate sandwich cookies, crushed (optional)
Instructions
- Preheat Oven: Preheat to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- Make Brownie Layer: Whisk melted butter, sugar, eggs, vanilla, and red food coloring until smooth. Sift in cocoa, salt, and flour; fold gently. Spread batter evenly in pan.
- Prepare Cookies & Cream Layer: Beat cream cheese, sugar, egg, and vanilla until smooth. Fold in chopped cookies.
- Layer & Swirl: Spoon cheesecake mixture over brownie batter. Swirl gently with a spatula or knife for marbled effect.
- Bake: Bake 30–35 minutes until edges are set and a toothpick comes out with moist crumbs.
- Cool & Garnish: Cool completely in pan. Sprinkle crushed cookies on top if desired.
- Serve: Slice into squares and enjoy!
