Mini apple pies in cookie form—sweet, spiced, and drizzled with caramel for the ultimate treat!
Ingredients
For Apple Pie Filling
- 3 apples (about 1 lb), peeled and sliced into 8 slices each
- 1–2 tbsp lemon juice
- 3 tbsp white sugar
- 3 tbsp brown sugar
- 3 tbsp cornstarch
- ½ tsp cinnamon
- A dash of nutmeg
- ¾ cup water
For Pie Crust
- 1 cup (2 sticks) unsalted butter, chilled and cubed
- 2½ cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- ¼ cup ice water
- Or use 1 package refrigerated pie crust (2 crusts)
Filling & Topping
- 1¾ cups apple pie filling, chopped into small pieces
- 1 cup caramel sauce
- 1 egg, lightly beaten
- 1 tsp cinnamon
- ¼ cup sugar
Instructions
- Make Apple Pie Filling: Toss apples with lemon juice. In a saucepan, combine cornstarch, sugars, cinnamon, nutmeg, and water. Bring to a boil, whisking constantly, until thickened (2 minutes). Stir in apples, reduce heat, cover, and simmer ~10 minutes until soft but not mushy. Cool, then chop into small pieces.
- Make Pie Crust: Mix flour, salt, and sugar. Cut in butter until coarse crumbs form. Add ice water gradually until dough holds together. Divide into 2 discs, wrap, and chill 1 hour. Roll each disc ⅛-inch thick.
- Assemble Cookies: Preheat oven to 350°F (175°C). Line baking sheet with parchment. Spread caramel sauce on one crust, then chopped apple filling. Create a lattice top with strips from the second crust. Cut cookies with a 2.5-inch round cutter and place on sheet.
- Finish: Brush tops with beaten egg. Mix cinnamon and sugar, sprinkle generously. Bake 20–30 minutes until golden brown.
