- 2 cups corn kernels (fresh, frozen, or canned)
- 1 tbsp mayonnaise
- 1 tbsp sour cream
- 1 tsp lime juice
- ½ tsp chili powder
- ¼ tsp smoked paprika (optional)
- ¼ cup cotija cheese or feta, crumbled
- Fresh cilantro, chopped
For the Rice
- 2 cups cooked white or brown rice
- 1 tbsp lime juice
- ¼ cup fresh cilantro, chopped
Optional Toppings
- Sliced avocado or guacamole
- Diced tomatoes
- Sliced jalapeños
- Extra crumbled cotija cheese
- Lime wedges
Directions
- Marinate Chicken: Mix olive oil, lime juice, spices, salt, and pepper. Coat chicken and marinate for 30 minutes to 4 hours.
- Grill Chicken: Preheat grill or grill pan. Cook chicken 6–8 minutes per side until internal temp reaches 165°F (75°C). Let rest, then slice.

- Prepare Rice: Toss cooked rice with lime juice and chopped cilantro.
