Ingredients

  • 250 g coral lentils
  • 1 red onion, finely chopped
  • 1 red pepper, cut into small cubes
  • 1 cucumber, cut into small cubes
  • 1 tomato, cut into cubes
  • 1 bunch fresh parsley, finely chopped
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Salt & ground black pepper, to taste

Instructions

  1. Cook Lentils: Rinse lentils in cold water. Cook in boiling salted water for 10–15 minutes until tender but slightly firm. Drain and cool.
  2. Prepare Vegetables: Dice onion, red pepper, cucumber, and tomato. Chop parsley finely.
  3. Assemble Salad: In a large bowl, combine cooled lentils with vegetables and parsley.
  4. Make Dressing: Mix lemon juice and olive oil in a small bowl. Season with salt and pepper.
  5. Finish: Pour dressing over salad. Toss gently to coat.
  6. Serve: Chill for at least 30 minutes before serving to let flavors meld.
