Coral Lentil Salad 🥗✨

Ingredients
- 250 g coral lentils
- 1 red onion, finely chopped
- 1 red pepper, cut into small cubes
- 1 cucumber, cut into small cubes
- 1 tomato, cut into cubes
- 1 bunch fresh parsley, finely chopped
- Juice of 1 lemon
- 3 tbsp olive oil
- Salt & ground black pepper, to taste
Instructions
- Cook Lentils: Rinse lentils in cold water. Cook in boiling salted water for 10–15 minutes until tender but slightly firm. Drain and cool.
- Prepare Vegetables: Dice onion, red pepper, cucumber, and tomato. Chop parsley finely.
- Assemble Salad: In a large bowl, combine cooled lentils with vegetables and parsley.
- Make Dressing: Mix lemon juice and olive oil in a small bowl. Season with salt and pepper.
- Finish: Pour dressing over salad. Toss gently to coat.
- Serve: Chill for at least 30 minutes before serving to let flavors meld.
