Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chips
  • ½ cup crushed candy canes (for mixing + topping)

Instructions

  1. Preheat Oven: Set oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. Cream Butter & Sugars: Beat softened butter, granulated sugar, and brown sugar until smooth.
  3. Add Wet Ingredients: Mix in egg, vanilla, and peppermint extract until combined.
  4. Prepare Dry Mix: Whisk flour, cocoa powder, baking soda, and salt in a separate bowl.
  5. Combine: Gradually add dry mixture to wet mixture, stirring until dough forms.
  6. Fold In: Stir in chocolate chips and half of the crushed candy canes.
  7. Shape: Scoop tablespoon-sized dough balls onto baking sheet.
  8. Bake: Bake 8–10 minutes until edges are set but centers remain soft.
  9. Top: Sprinkle with remaining crushed candy canes while warm.
  10. Cool: Let cookies rest 2–3 minutes on sheet, then transfer to rack.
