Ingredients
For the Crust
- 2 cups chocolate cookie crumbs (Oreos or similar)
- 6 tbsp melted butter
- 2 tbsp sugar
For the Cheesecake Filling
- 450 g (16 oz) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup melted dark chocolate, cooled slightly
For the Cherry Symphony Topping
- 1 can (21 oz) cherry pie filling OR 2 cups fresh cherries cooked with ½ cup sugar
- 1 tsp vanilla extract
- Optional: 1 tbsp cherry juice (as kirsch substitute)
For the Chocolate Drizzle & Garnish
- ½ cup melted chocolate
- Whipped cream
- Extra cherries
Instructions
- Make Crust: Preheat oven to 325°F (165°C). Mix crumbs, butter, and sugar. Press into springform pan. Bake 8–10 minutes, then cool.
- Cheesecake Filling: Beat cream cheese and sugar until smooth. Add sour cream and vanilla. Mix in eggs one at a time. Fold in melted chocolate. Pour over cooled crust.
- Bake: Bake 55–65 minutes until edges are set but center wobbles slightly. Turn off oven, rest cheesecake inside for 1 hour. Cool, then refrigerate 4+ hours or overnight.
- Cherry Topping: Warm cherry filling in saucepan. Stir in vanilla and cherry juice. Cool completely.
- Assemble: Spoon cherry topping over chilled cheesecake. Drizzle melted chocolate. Add whipped cream rosettes and extra cherries.
- Serve: Slice with a warm knife for clean layers. Enjoy!
