Ingredients

For the Crust

  • 2 cups chocolate cookie crumbs (Oreos or similar)
  • 6 tbsp melted butter
  • 2 tbsp sugar

For the Cheesecake Filling

  • 450 g (16 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup melted dark chocolate, cooled slightly

For the Cherry Symphony Topping

  • 1 can (21 oz) cherry pie filling OR 2 cups fresh cherries cooked with ½ cup sugar
  • 1 tsp vanilla extract
  • Optional: 1 tbsp cherry juice (as kirsch substitute)

For the Chocolate Drizzle & Garnish

  • ½ cup melted chocolate
  • Whipped cream
  • Extra cherries

Instructions

  1. Make Crust: Preheat oven to 325°F (165°C). Mix crumbs, butter, and sugar. Press into springform pan. Bake 8–10 minutes, then cool.
  2. Cheesecake Filling: Beat cream cheese and sugar until smooth. Add sour cream and vanilla. Mix in eggs one at a time. Fold in melted chocolate. Pour over cooled crust.
  3. Bake: Bake 55–65 minutes until edges are set but center wobbles slightly. Turn off oven, rest cheesecake inside for 1 hour. Cool, then refrigerate 4+ hours or overnight.
  4. Cherry Topping: Warm cherry filling in saucepan. Stir in vanilla and cherry juice. Cool completely.
  5. Assemble: Spoon cherry topping over chilled cheesecake. Drizzle melted chocolate. Add whipped cream rosettes and extra cherries.
  6. Serve: Slice with a warm knife for clean layers. Enjoy!
