Ingredients

For the Salmon

  • 2 salmon fillets
  • 2 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • Salt and pepper, to taste

For the Pasta

  • 8 oz penne pasta
  • Salt for boiling water

For the Creamy Garlic Alfredo Sauce

  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ tsp dried basil
  • Salt and pepper, to taste
  • Optional: ¼ cup sun-dried tomatoes, chopped
  • Optional: 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Cook the Pasta: Boil penne in salted water until al dente. Reserve ½ cup pasta water, then drain and set aside.
  2. Season & Sear Salmon: Pat salmon dry. Season with salt, pepper, and Italian seasoning. Heat olive oil in skillet over medium-high heat. Sear salmon 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. Make Alfredo Sauce: In same skillet, melt butter. Add garlic and sauté 1 minute. Pour in cream and simmer 2–3 minutes. Stir in Parmesan, basil, salt, pepper, and sun-dried tomatoes if using. Simmer until thickened.
  4. Combine: Add cooked penne to sauce. Toss to coat. Add reserved pasta water if needed for consistency.
  5. Serve: Plate pasta and top with salmon fillets. Garnish with parsley and extra Parmesan.
