Ingredients
For the Salmon
- 2 salmon fillets
- 2 tbsp olive oil
- 1 tsp dried Italian seasoning
- Salt and pepper, to taste
For the Pasta
- 8 oz penne pasta
- Salt for boiling water
For the Creamy Garlic Alfredo Sauce
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp dried basil
- Salt and pepper, to taste
- Optional: ¼ cup sun-dried tomatoes, chopped
- Optional: 1 tbsp chopped fresh parsley (for garnish)
Instructions
- Cook the Pasta: Boil penne in salted water until al dente. Reserve ½ cup pasta water, then drain and set aside.
- Season & Sear Salmon: Pat salmon dry. Season with salt, pepper, and Italian seasoning. Heat olive oil in skillet over medium-high heat. Sear salmon 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Make Alfredo Sauce: In same skillet, melt butter. Add garlic and sauté 1 minute. Pour in cream and simmer 2–3 minutes. Stir in Parmesan, basil, salt, pepper, and sun-dried tomatoes if using. Simmer until thickened.
- Combine: Add cooked penne to sauce. Toss to coat. Add reserved pasta water if needed for consistency.
- Serve: Plate pasta and top with salmon fillets. Garnish with parsley and extra Parmesan.
