🍓 Whipped Shortbread Cookies 🍪✨
Light, buttery, and melt-in-your-mouth—these whipped shortbread cookies are perfect for any celebration!
Ingredients
- 1 cup unsalted butter, softened
- ½ cup (60 g) powdered sugar, sifted
- 1 tsp pure vanilla extract
- ÂĽ tsp fine sea salt
- 2 cups all-purpose flour, spooned and leveled
Optional Finishes
- Coarse sparkling sugar (for rolling)
- Mini chocolate chips or edible glitter (for decoration)
- Melted white or dark chocolate (for drizzling)
Instructions
- Cream Butter & Sugar: Beat butter on medium speed for 1–2 minutes until smooth. Add powdered sugar and beat 2–3 minutes until light and fluffy. Scrape bowl as needed.
- Add Flavor: Mix in vanilla and salt. Beat until fully incorporated.
- Add Flour: With mixer on low, add flour in 3 batches. Mix just until dough forms—do not overmix.
- Shape: Scoop 1 tbsp dough or roll into 1-inch balls. Place 2″ apart on parchment-lined baking sheets. Flatten slightly with a glass dipped in sugar or press with a fork.
- Optional: Roll in sparkling sugar before flattening for shimmer.
- Chill: Refrigerate shaped cookies for 15–20 minutes to prevent spreading.
- Bake: Preheat oven to 325°F (165°C). Bake 14–16 minutes, rotating pans halfway, until edges are golden and centers are set.
- Cool & Finish: Cool on baking sheet for 5 minutes, then transfer to wire rack. Once cool, drizzle with melted chocolate or dust with powdered sugar.
