Ingredients

For the Cupcakes

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp cocoa powder
  • 1 tsp salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

For the Cheesecake Filling

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

For the Frosting

  • 1 cup unsalted butter, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 2–3 tbsp heavy cream

Directions

  1. Preheat & Prep: Preheat oven to 350°F (175°C). Line muffin tin with cupcake liners.
  2. Make Cupcake Batter: Sift flour, sugar, baking soda, cocoa, and salt. In another bowl, whisk oil, buttermilk, eggs, food coloring, vanilla, and vinegar. Combine wet and dry ingredients. Fill liners ⅔ full.
  3. Cheesecake Filling: Beat cream cheese, sugar, egg, and vanilla until smooth. Drop spoonful into center of each cupcake.
  4. Bake: Bake 18–20 min until toothpick in cupcake portion comes out clean. Cool completely.
  5. Frosting: Beat butter until creamy. Add powdered sugar gradually. Mix in vanilla and cream until fluffy.
  6. Frost & Serve: Frost cooled cupcakes. Garnish with red velvet crumbs if desired.
