Ingredients
For the Cupcakes
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 1 tsp baking soda
- 1 tsp cocoa powder
- 1 tsp salt
- 1 cup vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tbsp red food coloring
- 1 tsp vanilla extract
- 1 tsp white vinegar
For the Cheesecake Filling
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
For the Frosting
- 1 cup unsalted butter, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp heavy cream
Directions
- Preheat & Prep: Preheat oven to 350°F (175°C). Line muffin tin with cupcake liners.
- Make Cupcake Batter: Sift flour, sugar, baking soda, cocoa, and salt. In another bowl, whisk oil, buttermilk, eggs, food coloring, vanilla, and vinegar. Combine wet and dry ingredients. Fill liners ⅔ full.
- Cheesecake Filling: Beat cream cheese, sugar, egg, and vanilla until smooth. Drop spoonful into center of each cupcake.
- Bake: Bake 18–20 min until toothpick in cupcake portion comes out clean. Cool completely.
- Frosting: Beat butter until creamy. Add powdered sugar gradually. Mix in vanilla and cream until fluffy.
- Frost & Serve: Frost cooled cupcakes. Garnish with red velvet crumbs if desired.
