Ingredients
Wet Base
- 1 cup (240 g) plain Greek yogurt
- ¾ cup (150 g) granulated sugar
- ½ cup (110 ml) vegetable oil
- 3 large eggs, room temperature
- ½ tsp pure vanilla extract
Dry Blend
- 1½ cups (188 g) all-purpose flour
- 2 tsp baking powder
- ½ tsp fine sea salt
Cereal & Finish
- 2 cups Fruity Pebbles cereal
- Extra ¼ cup Fruity Pebbles, for topping
Instructions
- Prep & Preheat: Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment, leaving overhang for easy removal. Lightly grease exposed areas.
- Mix Wet Ingredients: In a large bowl, whisk oil, yogurt, eggs, sugar, and vanilla until smooth (~1–2 minutes).
- Incorporate Dry Ingredients: Add flour, baking powder, and salt. Stir gently until no dry streaks remain. Do not overmix.
- Fold in Cereal: Add 1¾ cups Fruity Pebbles. Fold gently with spatula (5–6 strokes) to preserve crunch.
- Fill & Top: Pour batter into pan. Smooth top. Sprinkle remaining ¼ cup Fruity Pebbles evenly.
- Bake: Bake 45–50 minutes until toothpick comes out with moist crumbs. Tent with foil after 35 minutes if browning too quickly.
- Cool: Cool in pan 15 minutes. Lift out with parchment and cool fully (≥30 minutes) before slicing.
