Ingredients
For the Cheesecake Filling
- 4 oz (½ cup) full-fat cream cheese, softened
- 2 tbsp granulated sugar
- ¼ tsp pure vanilla extract
- Pinch of fine sea salt
For the Cookie Dough
- 2¼ cups all-purpose flour
- 1 tsp cornstarch (for extra softness)
- ½ tsp baking soda
- ¾ tsp fine sea salt
- ¾ cup unsalted butter, softened (not melted)
- ¾ cup packed light brown sugar
- ¼ cup granulated sugar
- 1 large egg, room temperature
- 2 tsp pure vanilla extract
- 1¼ cups semi-sweet chocolate chips (or mix of dark & milk)
Instructions
- Prepare Filling: Beat cream cheese, sugar, vanilla, and salt until smooth (1–2 min). Scoop into 12 portions (~1 tbsp each), roll into balls, and freeze 15–20 min.
- Make Dough: Whisk flour, cornstarch, baking soda, and salt. In another bowl, beat butter, brown sugar, and granulated sugar until fluffy (2–3 min). Add egg and vanilla. Mix in dry ingredients gradually. Fold in chocolate chips.
- Assemble: Scoop ~3 tbsp dough, flatten, place cheesecake ball in center, wrap dough around, and seal. Shape into smooth balls. Place on parchment-lined tray, 3″ apart. Chill 30 min.
- Bake: Preheat oven to 350°F (175°C). Bake 12–14 min until edges are golden and centers puffed. Cool 5 min on sheet, then transfer to wire rack.
