A rustic, hearty soup for beer lovers—dark beer, caramelized onions, and crispy pretzel croutons topped with cheddar!

Ingredients

For the Soup

  • 4 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp sugar (optional, for caramelization)
  • 3 garlic cloves, minced
  • 2 cups dark beer (Stout or Belgian Dubbel)
  • 4 cups beef or vegetable broth
  • 1 tbsp Worcestershire sauce
  • ½ tsp dried thyme
  • ¼ cup brown sugar
  • Salt & pepper, to taste
  • 1 cup grated aged cheddar cheese

For the Pretzel Croutons

  • 2 large pretzels, cubed
  • 2 tbsp butter, melted

Instructions

  1. Caramelize Onions: Heat butter and olive oil in a pot over medium heat. Add onions and sugar. Cook 30–40 minutes until deeply caramelized.
  2. Add Garlic & Deglaze: Stir in garlic for 1–2 minutes. Pour in beer, scraping browned bits. Simmer 5 minutes.
  3. Add Broth & Seasonings: Stir in broth, Worcestershire, thyme, and brown sugar. Bring to boil, then simmer 20 minutes. Season with salt and pepper.
  4. Pretzel Croutons: Toss pretzel cubes with melted butter. Bake at 375°F (190°C) for 10 minutes until golden.
  5. Assemble & Serve: Ladle soup into bowls. Top with pretzel croutons and sprinkle with cheddar.
