A moist, tangy pound cake infused with key lime juice and zest, topped with a refreshing glaze!

Ingredients

For the Cake

  • 3 cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup unsalted butter, softened
  • 2½ cups granulated sugar
  • 5 large eggs, room temperature
  • 1 cup whole milk, room temperature
  • ¼ cup key lime juice
  • 1 tbsp key lime zest
  • 1 tsp vanilla extract

For the Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp key lime juice
  • ½ tsp vanilla extract
  • Key lime zest, for garnish (optional)

Directions

  1. Prepare Oven & Pan: Preheat oven to 325°F (160°C). Grease and flour a bundt pan thoroughly.
  2. Mix Dry Ingredients: Whisk flour, baking powder, and salt in a medium bowl. Set aside.
  3. Cream Butter & Sugar: Beat butter and sugar until light and fluffy (3–4 minutes).
  4. Add Eggs & Flavoring: Beat in eggs one at a time. Add lime juice, zest, and vanilla.
  5. Combine: Alternate adding dry ingredients and milk, beginning and ending with dry. Mix until just combined.
  6. Bake: Pour batter into pan. Bake 1 hr 15–20 min, until toothpick comes out clean.
  7. Cool: Let cake cool in pan 15 min, then transfer to wire rack.
  8. Glaze: Whisk powdered sugar, lime juice, and vanilla until smooth. Drizzle over cooled cake. Garnish with zest.
