Ingredients
For the Cake
- 3 cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup unsalted butter, softened
- 2½ cups granulated sugar
- 5 large eggs, room temperature
- 1 cup whole milk, room temperature
- ¼ cup key lime juice
- 1 tbsp key lime zest
- 1 tsp vanilla extract
For the Glaze
- 1 cup powdered sugar
- 2–3 tbsp key lime juice
- ½ tsp vanilla extract
- Key lime zest, for garnish (optional)
Directions
- Prepare Oven & Pan: Preheat oven to 325°F (160°C). Grease and flour a bundt pan thoroughly.
- Mix Dry Ingredients: Whisk flour, baking powder, and salt in a medium bowl. Set aside.
- Cream Butter & Sugar: Beat butter and sugar until light and fluffy (3–4 minutes).
- Add Eggs & Flavoring: Beat in eggs one at a time. Add lime juice, zest, and vanilla.
- Combine: Alternate adding dry ingredients and milk, beginning and ending with dry. Mix until just combined.
- Bake: Pour batter into pan. Bake 1 hr 15–20 min, until toothpick comes out clean.
- Cool: Let cake cool in pan 15 min, then transfer to wire rack.
- Glaze: Whisk powdered sugar, lime juice, and vanilla until smooth. Drizzle over cooled cake. Garnish with zest.
