Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef or lamb
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper, to taste
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 lb potatoes, peeled and diced
  • 1 cup half-and-half or milk
  • 1 tbsp cornstarch (optional, for thickening)
  • 4 slices turkey bacon, cooked and crumbled
  • ½ cup sour cream
  • Fresh chives or parsley, chopped (for garnish)
  • Toasted bread bites (for serving)

Directions

  1. Cook Meat: Heat olive oil in a large pot. Add beef or lamb, cook until browned, and drain excess fat.
  2. Add Vegetables: Stir in onion, garlic, carrots, and celery. Cook 5 minutes until softened. Season with thyme, rosemary, salt, and pepper.
  3. Simmer Soup: Add beef broth and potatoes. Simmer 15–20 minutes until potatoes are fork-tender.
  4. Add Peas & Corn: Stir in peas and corn. Cook 5 minutes more.
  5. Make Creamy: Stir in half-and-half or milk. For thicker soup, add cornstarch slurry and simmer until thickened.
  6. Garnish & Serve: Ladle into bowls. Top with sour cream, crumbled turkey bacon, and fresh herbs. Serve with toasted bread bites.
