Ingredients
Dry Base
- 2½ cups (315 g) all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp fine sea salt
Wet Blend
- ½ cup (113 g) unsalted butter, room temperature
- 1 cup (200 g) granulated sugar
- 2 large eggs, lightly whisked
- 1 cup (240 g) mashed ripe banana (≈2½–3 bananas)
- 1 tsp pure vanilla extract
- ½ cup (120 mL) whole milk
Add-Ins & Finish
- 28 mini peanut butter cups, divided
- 1 tbsp flour (for dusting mix-ins)
Instructions
- Prep & Preheat: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment.
- Coat Mix-Ins: Chop 22 peanut butter cups. Toss with 1 tbsp flour to prevent sinking.
- Mix Dry: Sift flour, baking soda, baking powder, and salt. Whisk to combine.
- Build Batter: Cream butter and sugar until pale and fluffy. Add eggs gradually. Mix in banana and vanilla.
- Combine: Add dry mixture in thirds, alternating with milk. Mix gently until smooth (do not overmix).
- Fold & Fill: Fold in floured peanut butter cup pieces. Transfer batter to pan and smooth top.
- Top & Bake: Halve remaining 6 cups. Press into batter surface. Bake 55–65 minutes, tenting with foil if browning too quickly. Test with toothpick.
- Cool & Slice: Rest 15 minutes in pan. Lift out with parchment. Cool 1–2 hours before slicing.
