Ingredients
Chocolate Crust
- 1 ½ cups chocolate wafer cookie crumbs
- ⅓ cup granulated sugar
- 6 tbsp unsalted butter, melted
Fudge Layer
- 1 cup semi-sweet chocolate chips
- ½ cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup all-purpose flour
- ¼ tsp salt
Coffee Mousse Layer
- 1 ½ cups cold heavy whipping cream
- 3 tbsp powdered sugar
- 1 tsp instant espresso powder
- 1 tsp vanilla extract
Garnish
- Toasted pecans or chopped chocolate
Instructions
- Prepare Crust: Preheat oven to 350°F (175°C). Mix cookie crumbs and sugar. Stir in melted butter. Press into a 9-inch pie plate. Bake 8 minutes. Cool.
- Make Fudge Layer: Melt chocolate chips and butter over a double boiler. Cool slightly. Whisk in sugar, eggs (one at a time), vanilla, flour, and salt.
- Bake Base: Pour fudge batter into crust. Bake 20–25 minutes until top is set and crackled. Cool completely.
- Whip Mousse: In a chilled bowl, whip cream, powdered sugar, espresso powder, and vanilla until firm peaks form.
- Assemble: Spread mousse over cooled fudge layer.
- Chill & Serve: Refrigerate at least 4 hours. Garnish with pecans or chocolate before serving.
