Ingredients

Directions
- Sear Pork: Heat olive oil in skillet over medium-high. Season pork chops with salt and pepper, sear 2–3 minutes per side until browned. Remove and set aside.
- Sauté Aromatics: Add onion and garlic to skillet, cook 2–3 minutes until softened.
- Deglaze: Pour in chicken broth, scraping up browned bits.
- Slow Cook: Transfer pork chops, onion, and garlic to slow cooker. Add cream, Dijon, soy sauce, and thyme. Stir to combine.
- Cook: Cover and cook on low 6–7 hours or high 3–4 hours until tender.
- Thicken (Optional): Mix cornstarch with 2 tbsp water. Stir into sauce, cook 10 minutes on high.
