Ingredients

  • 4 boneless pork chops
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp cornstarch (optional, for thickening)

Directions

  1. Sear Pork: Heat olive oil in skillet over medium-high. Season pork chops with salt and pepper, sear 2–3 minutes per side until browned. Remove and set aside.
  2. Sauté Aromatics: Add onion and garlic to skillet, cook 2–3 minutes until softened.
  3. Deglaze: Pour in chicken broth, scraping up browned bits.
  4. Slow Cook: Transfer pork chops, onion, and garlic to slow cooker. Add cream, Dijon, soy sauce, and thyme. Stir to combine.
  5. Cook: Cover and cook on low 6–7 hours or high 3–4 hours until tender.
  6. Thicken (Optional): Mix cornstarch with 2 tbsp water. Stir into sauce, cook 10 minutes on high.
  7. Serve: Spoon sauce over pork chops. Pair with mashed potatoes, rice, or vegetables.
