Ingredients

  • 1 cup shortening
  • 2 cups sugar
  • 6 large eggs
  • 3 cups all-purpose flour
  • 3/4 cup sour cream
  • 3/4 tsp baking powder
  • 2 tsp vanilla extract
  • 1 can (20 oz) crushed pineapple, drained

Instructions

  1. Preheat: Set oven to 325°F (165°C). Grease and flour a bundt or loaf pan.
  2. Cream: In a large bowl, beat shortening and sugar until light and fluffy.
  3. Add Eggs: Beat in eggs one at a time, mixing well after each addition.
  4. Mix Dry: In a separate bowl, whisk flour and baking powder.
  5. Combine: Gradually add dry ingredients to creamed mixture. Stir in sour cream, vanilla, and drained pineapple.
