Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots

Instructions
- Preheat: Set oven to 350°F (175°C). Grease two 9-inch round cake pans.
- Mix Dry: In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Mix Wet: In another bowl, whisk oil, eggs, grated carrots, pineapple, and vanilla.
- Combine: Add wet mixture to dry ingredients. Stir in walnuts.
- Bake: Divide batter into pans. Bake 25–30 minutes until a toothpick comes out clean.
- Cool: Let cakes cool in pans 10 minutes, then transfer to wire racks.
