Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1 cup chopped walnuts
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat: Set oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. Mix Dry: In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Mix Wet: In another bowl, whisk oil, eggs, grated carrots, pineapple, and vanilla.
  4. Combine: Add wet mixture to dry ingredients. Stir in walnuts.
  5. Bake: Divide batter into pans. Bake 25–30 minutes until a toothpick comes out clean.
  6. Cool: Let cakes cool in pans 10 minutes, then transfer to wire racks.

Notes

  • Add raisins for extra sweetness.
  • Swap walnuts for pecans for a different texture.
