Ingredients
- 4 large bell peppers (red, green, or yellow)
- 1 lb ground beef
- 1/2 cup cooked bacon, crumbled 🥓
- 1/2 cup BBQ sauce
- 1/2 cup shredded cheddar cheese 🧀
- 1/4 cup diced mushrooms 🍄
- 1/4 cup diced onions 🧅
- 1/4 cup diced pickles 🥒
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Directions
- Prep Peppers: Preheat oven to 375°F (190°C). Cut tops off peppers, remove seeds and membranes.
- Cook Beef: In skillet over medium heat, cook ground beef until browned. Add mushrooms and onions, cook 2–3 minutes until softened.
- Mix Filling: Stir in BBQ sauce, bacon, and pickles. Season with salt and pepper.
- Stuff Peppers: Fill peppers generously with beef mixture. Sprinkle cheddar cheese on top.
- Bake: Place peppers in baking dish. Cover with foil. Bake 25–30 minutes until peppers are tender and cheese melted.
- Serve: Remove from oven, garnish with parsley, and serve hot.
