🍫🍮 Chocolate Cake with Caramel & Ganache ✨

Rich chocolate layers, creamy caramel filling, and glossy ganache—perfect for birthdays, holidays, or indulgent weekends!

Ingredients

1️⃣ Chocolate Cake

  • 2 cups flour
  • 1 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk (room temperature)
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot coffee or hot water

2️⃣ Caramel Filling

  • 1 can (400g) dulce de leche
  • OR 1 cup caramel sauce + ½ cup thick whipped cream

3️⃣ Chocolate Ganache

  • 1½ cups cream
  • 340g dark chocolate, finely chopped
  • 2 tbsp butter (optional, for shine)

4️⃣ Topping

  • Grated orange-white chocolate
  • Grated carrot
  • Candied orange peel

Instructions

1️⃣ Cake Preparation

  1. Grease three 20 cm cake pans and line bottoms with parchment paper.
  2. Mix flour, cocoa, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Whisk buttermilk, oil, eggs, and vanilla in another bowl.
  4. Combine wet and dry mixtures. Stir until just combined.
  5. Slowly add hot coffee and mix until smooth and thin.
  6. Divide batter into pans and bake at 350°F (175°C) for 25–30 minutes.
  7. Cool cakes completely before assembling.

2️⃣ Caramel Filling

  1. Warm dulce de leche or caramel until spreadable.
  2. Spread generously between cake layers.

3️⃣ Chocolate Ganache

  1. Heat cream gently (do not boil).
  2. Pour over chopped chocolate. Let sit 2–3 minutes.
  3. Stir until smooth. Add butter if desired.
  4. Let ganache thicken slightly, then coat the cake.

4️⃣ Serving & Decorating

  • Sprinkle grated chocolate, carrot, or candied peel on top.
  • Chill cake for at least 30 minutes before slicing.
