Ingredients

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Ganache

  • 1 1/2 cups heavy cream
  • 8 oz dark chocolate, chopped
  • 1 tbsp butter

Instructions

  1. Preheat: Set oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add Wet Ingredients: Mix in eggs, milk, oil, and vanilla until smooth. Gradually stir in boiling water (batter will be thin).
  4. Bake: Divide batter between pans. Bake 30–35 minutes until toothpick comes out clean. Cool completely.
  5. Ganache: Heat cream in saucepan until just simmering. Pour over chopped chocolate. Stir until smooth, then add butter.
  6. Assemble: Frost cooled cakes with ganache. Stack layers and cover the entire cake generously.
