Ingredients
For the Fried Mushrooms
- 1 cup buttermilk
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1 cup all-purpose flour
- 1 cup breadcrumbs or panko
- 1 lb mushrooms (button, cremini, or oyster – cleaned & stems trimmed)
- 1/2 cup cornstarch
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper (optional)
- Vegetable oil (for frying)
For the Cool Ranch Dip
- 1/2 cup mayonnaise
- 1/2 cup sour cream or Greek yogurt
- 1 tsp lemon juice or vinegar
- 1/2 tsp dried dill
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley or chives (optional)
Directions
- Prep Mushrooms: Clean mushrooms and trim stems if needed. Keep whole for juiciness.
- Soak: Mix buttermilk, garlic powder, paprika, salt, and pepper. Add mushrooms, coat well, and soak 30 minutes.
- Breading Station: In one bowl, mix flour + cornstarch. In another, mix breadcrumbs, salt, pepper, and cayenne.
- Coat: Dredge mushrooms in flour mix, dip back into buttermilk, then coat in breadcrumbs. Let sit 5 minutes.
- Fry: Heat oil to 350°F (175°C). Fry mushrooms in batches 3–4 minutes until golden. Drain on paper towels. Sprinkle with salt.
- Dip: Mix mayonnaise, sour cream, lemon juice, dill, garlic powder, onion powder, salt, and pepper. Add parsley/chives. Chill 15 minutes.
- Serve: Pair crispy mushrooms with cool ranch dip. Enjoy hot and crunchy!
