Ingredients

  • 6 tomatillos
  • 1 jalapeño (optional, for spice)
  • 2 ripe avocados
  • A handful of fresh cilantro
  • 1/2 cup crema mexicana
  • 1 tbsp minced garlic
  • 1 tbsp chicken bouillon powder
  • 1 tbsp salt (or to taste)
  • Juice of 2 limes
  • 1/4 white onion
  • ~1 cup boiling water (from tomatillos/jalapeño)

Directions

  1. Boil: Cook tomatillos and jalapeño in saucepan ~10 minutes until softened.
  2. Blend Base: In blender, combine avocados, cilantro, crema, garlic, bouillon, salt, lime juice, and onion.
  3. Add Cooked Veggies: Add boiled tomatillos, jalapeño, and ~1 cup boiling water. Blend until smooth and creamy.
  4. Adjust: Taste and adjust salt if needed.
  5. Serve: Use as topping for tacos, enchiladas, or as a dip with tortilla chips.
