Ingredients
For the Crust
- 1½ cups crushed graham crackers
- 2 tbsp granulated sugar
- 6 tbsp unsalted butter, melted
For the Cheesecake Filling
- 16 oz (450g) cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
For the Topping
- 1 can cherry pie filling (or homemade cherry compote)
Instructions
- Preheat: Set oven to 325°F (163°C). Line a muffin tin with paper liners.
- Make Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into bottom of each liner. Bake 5 minutes, then cool.
- Make Filling: Beat cream cheese and sugar until smooth. Add eggs and vanilla, mix until creamy.
- Fill: Spoon cheesecake mixture over crusts, filling each cup about ¾ full.
- Bake: Bake 18–20 minutes until centers are set. Cool completely.
- Top: Spoon cherry filling over each cooled cupcake. Chill at least 1 hour before serving.
