Ingredients

For the Cake

  • 4 large eggs, separated 🎂
  • 1 cup granulated sugar, divided 🍫
  • 1/3 cup unsweetened cocoa powder 🥄
  • 1/2 cup all-purpose flour 🍚
  • 1/4 tsp salt 🧂
  • 1 tsp vanilla extract 🍦

For the Filling

  • 1 cup heavy cream 🧁
  • 2 tbsp powdered sugar 🍫

For the Frosting

  • 1 cup chocolate ganache 🌟

Instructions

  1. Preheat: Set oven to 350°F (175°C). Line jelly roll pan with parchment paper.
  2. Yolk Mixture: Beat egg yolks with half the sugar until thick and pale.
  3. Dry Ingredients: Sift cocoa, flour, and salt into yolk mixture. Fold gently.
  4. Egg Whites: Whip whites until soft peaks form. Gradually add remaining sugar. Beat until stiff.
  5. Combine: Fold egg whites into yolk mixture carefully.
  6. Bake: Spread batter evenly in pan. Bake 12–15 minutes until springy.
  7. Roll: While hot, roll cake in towel dusted with powdered sugar. Cool completely.
  8. Filling: Whip cream with powdered sugar until fluffy.
  9. Assemble: Unroll cake, spread filling, roll back tightly.
  10. Frost: Cover with ganache. Use fork to create bark-like texture.
  11. Decorate: Dust with powdered sugar, add holly or meringue mushrooms for festive touch.
